The gelateria is a space that offers fresh, daily churned gelato, rotating up to 20 flavours according to season and creative license. Chicho fans can dine in or take away whilst watching fresh gelato being churned. There will be limited edition flavours featuring exciting collaborations, a free flowing chocolate tap to top your flavour and seasonal specials such as the Chicho Panino (gelato sandwich). So many reasons to keep you returning for more!

Went to gelato university. Studied hard and learnt the tradition and the craft from the gelato masters. Passed!

Seattle to NYC

North America

Took a sabbatical seeking out the best food haunts in the Americas. Traversed the states and saw the sites from our camper van stopping at jaw dropping institutions, hipster dining halls and fine establishments. Devoured delicacies from food vans in Portland, Austin and NYC.

South America

Flew south for some latin flavours. Ate tacos al pastor in Mexican cervecerias, sipped malbec in Mendoza at the foothills of the andes and sampled some Brazilian barbecued meat that added notches to our belts. Jotted down a myriad of flavours and married them with unlikely partners. Left craving more.

Bought a first of its kind gelato cart from Italy and built a gelato laboratory. Made sorbetti and gelati from scratch, trialling a cacophony of flavours. Ate a lot of gelato with friends. Found ourselves pinching each other’s cheeks in the glorious aftermath of a gelato binge touting “eh, Chicho!” just like the Italian expression.

GELATO = MILK BASED

Gelato is an Italian term for ice-cream however even though they are of the same frozen treat family, they differ.
Gelato contains less air and 1/2 the fat of ice-cream and is made in small batches using real fruit, raw ingredients and fresh dairy with zero preservatives/colours/flavours.
Each recipe and flavouring is created FROM SCRATCH by careful balancing and infusing/melting/blending of raw ingredients. ChiCho are adamant on producing true and honest flavours that contain real ingredients. Check our gelateria in Northbridge for the latest flavours.

SORBET = FRUIT AND WATER BASED

Dairy free, fat free, frozen dessert made from fruit puree and water. When made correctly it is not icy but has a smooth consistency similar to gelato. All fruit used is local and seasonal therefore our range depends on availability of fruit grown and picked in WA. Each sorbet flavour is invented by us from scratch without commercial paste shortcuts. Check our gelateria in Northbridge for the latest flavours.

Collaborations

NEW WAVE GELATO

COLLABORATIONS

Chicho are embarking on a collaboration series with Perth Chefs to create a unique flavour showcasing the chef’s background and creative spirit with our gelato chef. The idea is for the chef to come into our gelateria with some loose ideas of a flavour and then experiment with our gelato master until perfection is met. Each chef collaboration will run for 1 month on our menu.

Next up is Biv legend, Zaki Anwar. Our neighbour and long time supporter of Chicho came in a few times to knock out the Mascarpone, Quince Jam & Smoked Almond banger. Definitely a delicate number with a few layers of deliciousness happening here.

Chef Collab Chicho X Jacob Dvauz (Short Order)

 

12800290_1053957234668394_6792453334238022842_nAt the mere age of 22 Jacob has apprenticed at Rockpool, headed up the kitchen at Uncle Joes, La Veen and is now working at Short Order Burgers and a variety of consulting projects to create new age menus. This young gun is primed for big things and we thought it appropriate to get his energy and talent into our gelato kitchen for our first chef collab flavour.

After 4 hours in the Chicho laboratorio they created “Miso Caramel with Roasted Milk Crumbs & Lashings of Condensed Milk”

This is nuance on salted caramel taking this overdone flavour to the next level. The milk crumbs add great texture and a biscuit flavour that we are all too familiar with and the condensed milk lifts the biscuit profile even further.
